Shrimp Scampi with a side of Contractions

Today marked the beginning of another work week…it has been tough going to work the past few weeks as the pass of each day I grew more and more anxious waiting for Hudson to come. Last night, I decided that I would work from home (WFH) Monday (today) and Tuesday…take Wednesday and Thursday off (PTO)…then have Friday as my first official Paternity leave as Cathy would need to be induced if Hudson decided to not come by then.

WFH has its perks, Cathy made breakfast, but has its negatives, Cathy talked to me to much. All in all, it was a productive but boring work day.

This evening, Cathy decided to try to cook Shrimp Scampi for the first time…and boy did she nail it. Probably my 2nd most favorite dish she has made me. Can’t go wrong with seafood, butter, garlic, and more butter and garlic…o yea and of course her famous banana nut bread!
